On June 17, Frontier Science and Social Co-creation Initiative visited Nanto City, Toyama Prefecture, as part of Project: AERU, and conducted a tour of the Narimasa Sake Brewery & Senbei (rice cracker) hand-baking experience. 9 Kanazawa University students participated.
The tour group first visited Narimasa Sake Brewery, a long-established sake brewery founded in 1894, and the first innovative company in Japan to brew sake with funds. The students were guided by Masato Yamada, director of the brewery, through the brewing process and the brewery's facilities, and then listened to a talk about the current state of the sake industry and Narimasa's efforts.
Next, at Sasaraya, a rice cracker specialty store established in 1924, participants experienced the process of baking each rice cracker by hand.
Students commented, "It was very interesting to learn about the resources and environment unique to the area," and "It was very interesting to hear real stories about the breweries' efforts and management difficulties."
